For more Health, Wealth and Happiness check out my blog! http://erinmayhenry.com/ RECIPE ONE – EASY VEGAN BROWNIE 2 cups flour (I used rice) 2 cups sweetner ( I used Xylatol) 3/4 cup unsweetened cocoa powder 1 tsp baking powder 1 tsp salt 1 cup non-dairy milk or water 1 cup vegetable oil (I used coconut) 1 tsp vanilla extract 1 cup chocolate chips or nuts (optional Preheat oven to 180 C. Mix together the flour, sugar, unsweetened, baking powder, and salt in a large bowl. Add in the water, oil, and vanilla, mix until well blended. Pour batter into a 9x13 pan and bake for 30 minutes, until the top is no longer shiny. RECIPE TWO – NO BAKE BANANA BALLS (THE BIG MANS WORLD) 1 1/2 cups flour pinch sea salt Cinnamon 1/4 cup granulated sweetener of choice (optional)** 1/4 cup overripe mashed banana (about 1 small) 2 T brown rice syrup (can sub for maple syrup, agave or honey if not strict vegan) 1/4 cup nut butter of choice (I used peanut) 1/4 cup dairy free milk of choice Dairy Free chocolate chips In a large mixing bowl, combine flour, protein powder, cinnamon, sea salt, granulated sweetener of choice and mix well. Add in the mashed banana- Mixture should be very crumbly. If using chocolate chips, add them here too. In a microwave safe bowl, combine the nut butter with the liquid sweetener of choice until melted. Pour wet mixture into the flour/banana mixture until fully incorporated. Using a tablespoon at a time, add the dairy free milk of choice until a very thick batter is formed.
